On the old site we had the most recently added images down the bottom of the page. We have the same here on this new and awesome site! But is there any way of making the gallery go back further then the last 10-15 images? Say the last 100 odd images?

If you go to the gallery and look in sort of the top left corner you will see a link that says 'recently added images' from there you can look back at least 10 pages of content.
